: I'm looking at a Sinn 303 automatic chonograph

Here are links to Sinn straps and bracelets and watches. A price of $850 for a new or mint 103 sounds pretty good IMHO.

As the 103 variants are available with straps or bracelets I don't see any problem replacing your strap.
