As far as I can remember, the Calibre 5 used in the automatic Aquaracers is basically an ETA 2824-2. This movement, along with I think all other modern calibre designs, has a safety device inside the winding barrel specifically tailored to avoid overwinding. The main spring is not solidly fastened to the barrel, it is attached by means of a pressure clamp working against the internal wall of the barrel. Any excesive winding releases the clamp, thus avoiding main spring breakage. The "clicking" sound you can hear is caused by such a release.
