I have an old, circa 1982, heuer 1000 200M professional quartz I'm interested in resurrecting to not only working but water resistant ( as in close to original 200M) condition. I've been told by a good local horologist that the movement and crown and back o-rings wouldn't be worth my time/money.

Yet I see websites offering the correct movement ESA 536-121 for only 15$, I'm sure the o-rings/seals can be had cheaply as well. My interest in watch repair is growing daily and I understand there is more to such a project than just replacing the movement, such as cleaning and pressure testing, but does anybody with more experience than I (everybody) know roughly what it would entail, assuming I did all the work myself?
