Bit of a dark art this one...sometimes my manual wind Valjoux' take 40-50 winds and some take 70-80, I also find that I rarely get anything approaching the claimed power reserve when fully wound, most lucky to run a full 24-30 hours.
However you should feel resistance at some point where it will not let you wind further without some substantial increaee in effort...
