I agree with Mark's assessment here: As long as you still have the original parts, and they are functional and don't show that the watch had been abused, then you are probably OK (in terms of the value upon a resale).
The use of "service parts" on the Viceroys is probably not such a big deal. We see a lot of the replacement hands, and collectors don't seem to apply much of a discount when they have been used.
