I would probably insure it for $750(a good guestimate). Or say $1,000, to round it off, if it doesn't cost any more or maybe they want a jeweler to give you an estimate if it is up that high.
Personally I would not pay extra to insure it at all on my own policy. Mine are hidden in the house or being worn on my wrist, so little chance to have it stolen.
