Feel dumb when we started, always better to ask than making a mistake provoking disasters.
To the best of my memory, Caliber 11, 12, 14 & 15 need to be wounded 30 times to be fully wounded over a correctly running movement.
Not sure there's any risk of overwind (?)
Shaking the watch to have it starting is a BAD idea keeping in mind these are vintage wrist ladies, always better to help them to wake up, I personally make 10/15 crown half revolutions before putting them on my wrist.
Having the watch needing 10mn to start might be a clue this one would need a service.
