I'm mainly into chronographs, mainly automatics and mainly Lemanias, but narrowing down the collection to three is awfully difficult. Let's see....
First and foremost my EZM1 would be top of the list, it's a watch I wear everyday in a wide variety of circumstances, I use the chronograph function almost every day, it's built to modern standards and is my most 'modern' watch, so it handles daily life well.
It is powered by my favourite movement (L5100) but has a focus that deleted subdials and accentuated the main plus point - the central minute chrono hand.
I have the LE (every day) and a ZUZ dialled one, and I would choose the LE for my 'wearing' watch.
Second, well, another Lemania, such is the proportion of my collection, it's a difficult choice now as there are a few I'm fond of or represent some special characteristic, the Tutima Commando II ZUZ issued one, my Omega 376.0822 is a beautiful watch and the last natural evolution of the Speedmaster I think. Perhaps the first series Sinn 156 with the deleted 24hr subdial... But the honour went to the Lemania SAAF, carrying the Lemania name, an issued watch, fairly scarce and a beautiful and unusual dial arrangement and 'look' I think. So, number two slot for horological interest and just a damn neat watch is the SAAF -
Third, well, I think I have to jump out of the Lemania mode, which narrows it down to a lovely Heuer Bund Sternzeit or a recent acquisition which has been on my list for a long time. I think this one represents one of the pinnacles of automatic chronograph design and implementation, featuring the new 3019 El Primero movement in the tri-colour dial and the trade-mark paddle second hand, Zenith got everything spot on with this one straight out of the blocks I think, the A386:
So - a day-to-day operational sort of watch, a nice uncommon, military issued showpiece one in the SAAF and a watch for when you're driving your Riva Aquarama around Lake Como.
