Personally, I find it difficult to predict trends in prices, but others do seem to be better at it. But it is not too difficult to observe the trends in prevailing prices.
While it's all about supply and demand, there seems to be steady demand (and relatively stable prices) for the Sifferts. $14,000 for the Pawn Stars SIffert may represent something of a "break-out", but I have heard of the nice ones selling in the $12,000 range for some time. The low end seems to be in the $5,000 to $6,000 range for a "Siffert" in poor to fair condition.
In terms of the "Siffert" name, I am confident that it is here to stay. We can continue to debate whether it is a specific model (Reference 1163T), or an execution within that range of models (Ref 1163T Chronomatic) or a color scheme, but this relatively loose language does not seem to be causing any real problems.
