I think I'm going to give up. I'm scared I'm bending the bezel and not able to get even pressure around the bezel at once unless I lay the watch on a pad and use all my fingers to push down and try to rotate (which I have not tried). Holding watch in one palm and pushing down and twisting with the other is proving unsuccessful and uneven pressure could cause bend in bezel. I see why they redesigned the bezel on the second execution :-). Unfortunately my watchmaker didn't seem as aware of the technique you mentioned.
