Sounds like a fantastic adventure lies ahead of you. Would love to see a photo diary when you return! I'd love to do something like that.

I think Rob sells sapphire crystals for the Autavia, have a search for Nakai Watches.
As for waterproofing it, I don't think any method is guaranteed, but get it to a decent watchmaker and have the rubber ring seals replaced, then dry pressure tested.
