Matt,
I own a Seamaster Pro "Bond" quartz and a Seamaster Pro Chronograph. Obviously, you need to decide what is important to you. If cost is a factor, and a high degree of accuracy are important, the quartz Seamaster Pro is the way to go. Also future repairs are going to be less expensive.
The Seamaster Pro Chronograph is quite a bit more expensive, more complicated (more to go wrong and expensive to repair if out of warranty). However, it is one awesome watch. The size and weight are substantial and the looks are phenomenal. It is also a very rugged watch that can take quite a beating and still keep going. Having a chronograph function can be very useful.
It is going to be a tough decision for you. I would say if you can afford it, buy both! Good Luck.
Dave.
