Who ever said that? Mechanical watches will ALWAYS have small variances like that across different conditions and when measured over short periods of time.
When a mechanical watch settles in, you will find that its LONG-TERM accuracy will become fairly consistent.

Sounds like you are already there! Never give importance to 12-hour or 1-2 day measurements of accuracy on mechanical watches. Instead, always measure the accuracy of a mechancial watch over a period of at least two weeks to allow these small variations to average out.
The true objective of an accurate mechanical watch is to stay sufficiently close to correct time that any variations are inconsequential in your life--and that's what your watch is already doing!
