There has been a lot of talk about metal hardness lately. What little I know is tied to steel used in knives. I found this chart that lists several different Ti alloys and their relative hardness compared to a generic high carbon steel and a ceramic.

This site doesn't list a stainless steel, but I can give you some ideas of what you might find in a knife:
440c 58-60RC
154cm 59-61
A higher carbon "tool steel" like D2 will get you an RC of between 59-62
All the stuff I've listed above are numbers advertised by manufacturers. It's all steel that's been worked and hardened to their specs. You can see from above there's not just one stainless steel or one Ti alloy. You might visit someplace like http://www.crucibleservice.com/ They provide a lot of steel to industry and their catalog will give you some idea of what is out there and how hard it is.
