Omega will not allow you to change parts to make a watch different from one they already sell.
But in general, I've seen that people pay WAY more attention to minutia when watch shopping than they ever do later on. It is way easy to overthink minutia.
Once most people have owned a watch for a few weeks, they usually stop being so obsessively attentative and fretful over this kind of stuff. The remainder are already on the road to madness, so there is little to do to help them anyway!
