They use 10:08 or 10:10 or anything like that because it shows most of the dial and does not hinder the writing - it is smiling. :-) They show a date of 8 because it looks nice.
Some people will disagree with me here, but Omega makes an in-house movement - it's the 3303/3301/etc calibers. They are made in the F. Piguet factory in a part that Omega owns. Some people consider this in-house, some people do not. Omega claims it is in-house and exclusive.
