A sapphire crystal rates a 9 on the Moh's Scale of Hardness, with diamond being a 10. To engrave into it you would need to first remove the sapphire caseback and then engrave it with a diamond tipped engraving device. However, sapphire crystals are prone to shattering when extreme stress is applied, so you would run the risk of shattering the caseback by attempting to engrave it. This is not a good idea.
