They are the same design, but the 2531.80 has CHRONOMETER as a line of text. The 2541.80 does not.
If you are not a "watch guy" I'd go for the quartz. It's cheaper, more accurate, and has the same quality case, crystal and bracelet. You don't have to worry about winding it after you haven't worn it in a while.
That being said, I would get the 2531.80 because I AM a "watch guy". I really get a kick out of the engineering, workmanship, craftsmanship, self perpetuating power of that micro machine, tuned to Chronometer Specifications (-4/+6 seconds per day). It cost more, is not as accurate, more fragile, costs more to service. It's also something I could pass down to my Grand Childrens' Children if I take care of it. I'm not sure that can be said for the quartz.
