Hi Scott,
I have the Speedmaster Date and I cannot independently set the hour hand on this watch. I'm pretty sure it's the same on the day-date.
If GMT is important to you I'd recommend the Bond GMT 2735.80, it even has the same bracelet as the day-date.
I'm not sure, but I don't think there are many chronographs out there with GMT.
