I did talk to Watchco a while ago, because some questions on the forum where I am a moderator, and asked them about the parts. Seems like they use the term NOS in a different way than we do. At least the dial and hands are new replacement parts from Omega.
But Like you, I think they do a wonderfull work to restore them. Like they do in Bienne. The third place I know of doing jobs like that is SwissTimeServices in the UK. Vintage omega repair
