Manual Winding

I'm interested in possibly getting either the Speedmaster Professional or Moonphase watch...basically one with a manually winding movement that's not a certified chronometer. Curious to know what sort of time the movements are keeping after two or three years. Like to also know how often you wind the watches, if you wind it even on days you don't wear it or do you simply let it sit and rewind and reset the time whenever you wear it again.
