I would ask your dealer to furnish you with a copy of the invoice so you can see exactly how the cost is broken down. $300 will get your watch a full servicing, which includes replacement of all the lubricants and any worn parts, polishing the entire watch to make it look like new, pressure testing the watch for water resistance, replacing all the gaskets and the crown, and testing your watch to make sure it is within COSC specs after servicing. The pins and sleeves should only cost a few dollars, so I can only guess that they are charging you a fortune for the diver's extension.
There is also the possibility that your AD is "jacking up the price" to get a premium for his time in sending it to Omega for you. If this is the case, and he can't show you an invoice from Omega with a detailed breakdown of the costs, then I'd send it to Omega yourself. You'll eliminate the "middle man" and any costs/hassles associated with it.
