I have had several Omegas serviced by STS and they all came back in excellent condition. They also replaced a dial on a 2.4KHz Constellation (one of the sparkly dials) and had an 18ct gold link made for my 8192 Electroquartz. The latter cost a bomb, but was almost indistinguishable from the originals on the bracelet.

So I think STS are OK! I see no point in sending the watch to Bienne for the servicing you need. But be aware that if you send it to STS by Special Delivery it isn't covered by the Royal Mail compensation scheme, all watches being excluded. I have not found any other carrier who will pay compensation. As far as I know at the moment, the same applies to sending a watch overseas.
