Rolex has established the standards with its cal 30xx produced from 1977-1988 and with the cal 31xx produced from 1988 till today, both were often considered as the ultimate reference when it comes to very rugged and very reliable movements.The movements are made by Rolex themselves.The sub and the sea dweller have been tested with both movements as well as by explorers with the GMT Master 2 and the Explorer 2.
Omega has lost its manufacture status which is quite sad because its calibers 101x,102x and 103x were equal to Rolex movements. Omega started to used the eta 2892-a2 in the constellation under the appelation cal 1111, the 1111 was modified in 1994 with a better winding system and became the 1120.The 2500 appeared in 1999, it is a fairly new movement but it is not made by Omega but made by Eta for Omega.

Rolex has a very long feedback when it comes to movements they are very robust and don't need too much tlc as compared to other movements.
