WHat I had considered doing in such a case was

1, ask for a photo that can hardly be forged, eg please take a photo of thw watch on a newspaper dated today, with the watch showing the time 07:30.

That'll prove that the seller actually has one.

2, I would insist on using a 3rd party. eg www.escrow.com

If the seller refused either of these conditions, I'd err on the side of caution.
