If you're wearing the watch every day, and are reasonably active, this shouldn't be necessary.

Sounds like you were getting it right on the second attempt! You pull the crown out to position 1 and rotate it away from you (ie clockwise). You should feel a very slight resistance as you do this. It's been advised on zOwie that around twenty turns should be sufficient, although you can't "overwind" it.
