Your highest-end watches can be found at Brinkhaus jewellers located in the Hotel Vancouver. They carry IWC, Rolex, Patek, Baume and Mercier, Omega, Audemars Piguet, Piaget, and Ebel. They don't carry a lot of inventory but they are definitely worth checking out.
Pacific Centre Mall also has a few watch shops that carry models from Blancpain and Vacheron as well as Rolex, Omega, etc. You may also want to check out Birks Jewellers (Pacific Centre Mall) as well.
But on the whole there isn't the selection of watch shops like you would find in Toronto or in the U.S.
If you live in the Vancouver area, you may want to check out places in Seattle too.
