You cannot overwind your watch. The overwind protection mechanism is there specifically to prevent this. However, if you are wearing the watch daily, then unscrewing the crown to wind it everyday is completely unnecessary. Doing this can cause the threads of the crown and the gasket to wear out faster.

If you want to wind it once a week or so just to make sure its power reserve is full, this would be reasonable. Many people have several mechanical watches but don't keep them on winders, so they only wind and set them when they plan to wear them. In your case, however, since you are wearing the watch everyday to keep it wound, I would NOT wind it daily.

I suspect that if you experiment with the different overnight positions, you will find that you can leave it in just the right position at night to keep it running well within COSC specs.
