My local watchmaker has always told me it's completely unnecessary to keep a watch running if you only wear it occasionally. Oh, and, yes, when you have older watches serviced they do replace the lubricants with more modern ones, so you don't have to worry about the "old days" when a stopped watch could result in a gummed up movement.

One thing I do recommend is that you keep a watch wound for a week or so after getting it back from a servicing, just to make sure that the servicing was done properly and that the watch is keeping good time.
