Getting a manufacturing date for your watch is going to be tough. I dont think customer service has the serial numbers up on their website at this time. Your watch is still relatively new.
If you bought your watch over the internet, you bought your watch from a non authorized Omega dealer. This means you won't get any help from Omega whatsoever. Do you have the serial numbers intact?
In so far as getting a COSC cerificate (showing testing date of movement), you'll need a dealer stamped warranty card. Don't know how to get around that one if your dealer isnt authorized.
In my case I played it safe and bought my Seamaster from a local AD, didnt want warranty hassles later on. Later, asked and recieved my COSC certificate in two weeks showing movement was tested and certified in Jan/05. Got an email from Bienne customer service, stating watch was assembled/manufactured in Sep/05. I bought the watch in Aug/06 (11 months after manufacturing and 20 months after movement was made!!). Shows you some product lays around for a bit.
What I'm trying to say is that Bienne has been very helpful to me because I bought their product through the proper channels.
This is just my simple experience, perhaps some of the more experienced Omega owners here can shed more light on your situation. Best of luck.
