Not sure about the Valjoux winding direction

Both my seamasters wound clockwise, or "turn towards the 12 o'clock position" Your watch has a different movement that either of my two, but If I had to guess, the winding is probably similar. And the winding is done in position 1, date position 2 and hands position 3.

Check your user's manual, it might be helpful in determining what is right for your caliber.
