Since it appears you are not looking for a chronograph, get the Seamaster. The Seamaster is water resistant to 300m, Wings to only 100m. Also the Wings does not have a screwdown crown. SMP also includes a helium release valve. Finally the SMP is the better value retailing for ~$1750 USD (chronograph, GMT, and America's cup are more). The most inexpensive Wings model is $1725 (page 88, #206, 2000 Breitling catalog) and it comes on a leather strap. I'm sure you could order it with a bracelet, but that would make it more expensive than the SMP.
My choice would be the SMP, but buy the watch looks and feels better to you. You will be the one wearing it.
