Sorry to have to dispell that nice romantic image, but...
Almost all Omega, Rolex, Breitling and most other fine watches are completely machine manufactured and assembled. These are products made in thousands and thousands of units per year. Rolex alone makes close to a MILLION watches a year. Nobody can handmake all those!
These brands each have a few high end and specialty models that involve a substantial amount of hand crafting. Check out the Omega skeleton models on this site and in the "Specialities" section of the official Omega site for some examples of handcrafted Omegas. For example, the handcrafted Omega Seamaster Skeleton in gold sells for $44,000! Its mass manufactured sister in solid gold sells for about $15,000 and a mere $1750 in all steel.
To make an analogy to automobiles, Omega, Rolex, and Breitling are like the BMW, Mercedes, and Lexus of the watch world. They are all well known for making superior products. Theirs are greatly superior to the industry average. And they achieve this through well controlled mass manufacturing processes to make the quality they are known for in the quantities that consumers are demanding.
But if you want hand crafted, you have to buy either the high-end specialties from these makers, or turn to the Rolls Royce, Ferrari, and Aston Martin level of manufacturers. The really high end manufacturers are defined by high levels of hand crafting, low numbers of units made per year, and MUCH HIGHER PRICES!
