The watch is placed in a small sealed chamber. The air pressure is increased using a precisely measured amount of air.
At any point, if the air pressure measured in the chamber is less than expected based on the amount of air pumped in, that means that some of the air had leaked into the watch. That means that water would have leaked in under similar pressure. But of course, testing with air is completely safe for the insides of the watch!
The pressure at 300 meters depth in water equals about 30 times air presure at sea level.
