I don't really understand the point of confusion you are experiencing. The differences are exactly what you observed: simply color and style.
Same reason automobiles and clothes come in different colors and styles--because some people will like certain ones better than others. The brightly colored dials are more sporty, so may appeal to different people than the more conservative black dial versions.
