Actually, 'gold filled' really means the opposite of what it sounds like. It is actually a gold shell of 60 microns thickness, filled with a different metal. This gives the watch a substantial gold content. It is thick enough that, unlike gold plating, there is no chance of the gold wearing off.
This was commonly done on nice watches in the 50's and 60's to make high quality gold watch cases without having to go to the expense of using solid gold.
