Hi Paul, I have both the White Dial Seamaster Professional GMT and the Seamaster Professional America's Cup Limited Edition. I've had the GMT for about 1 month and absolutely love it.
You get the 2nd time zone and no Helium Escape Valve on the GMT. It is thicker and heavier, and is limited to 3 models. I love my America's Cup too, but I would exchange the Helium Escape Valve for a second time zone any day. GMT does not have a quick date set or quick date rollover, the standard Seamaster Pro does. The standard Seamaster Pro comes in more options in size, color combinations, Quartz vs Automatic. The GMT costs $245 MSRP more than the standard Seamster Pro. The clasp on the Black GMT is a single button slide clasp which I don't care for, but on the white dial GMT it has the standard Seamaster Clasp with the two push buttons and the Wet Suit Extention.
They are Both very fine watches and you can't go wrong with either. Try them out and see what YOU like.
Look for a 25% - 35% discount off MSRP from an Authorized Omega Dealer. If you can't find one for that, ask for referrals here on the Forum and many of us can hook you up with great Dealers. To avoid paying sales tax, buy from a dealer out of state and have it shipped to you.
