questions about caliber

The caliber of the seamaster 120 is 1120. The caliber of the seamaster 150 is 2500. What does all this mean? Is it better to get a watch with a higher caliber? Will the watch with a higher caliber keep better time? I know that both watches are COSC certified and both are held to the same standards. The 150 is also a coaxial escapement. Will the new escapement be better for keeping time or is it mainly for maintenance issues? Any help will be greatly appreciated. I am new at this luxury watch stuff...I currently own a Seiko kinetic and would like to make the step up but don't really know what to think about these totally mechanical watches. Thanks!!!
