My question to you is: which Seamaster Pro are you looking at? There are several different kinds that vary in style (and unforunately, in price as well). For now, I'll assume that you're talking about the 2254.80 (black SMP) since this is the most compared Seamaster to the PO.....

First off, you should try both watches on at first.... OK, OK, I know that sounds pretty obvious, but it is very important since you're relatively new to these watches......

When some people put on the SMP, they find the 12 o' clock marker a little too big for their tastes...... While almost everyone agrees that the PO definately has a better finish than the SMP, some think the PO is just too thick or heavy, while others disagree...... Some hate the double Anti-Reflective coating while others love it...... It's all about personal preference.

Here's a review on TimeZone (or is it hosted by Chuck?) that compares the SMP (blue instead of black; # 2255.80) with the PO...... You may find it useful.

Good luck....

BTW: From my personal views, I agree with CajunMike about Breitlings. They usually have busy dials (Arabic Numerals and markers.....) and basic movements...... But they're great watches.
