What's a nice vintage manual wind no date Omega?

After having my 2531.80 (Bond SMP) for several months now, I'm deciding on my next purchase(s) ;-) After reading some great articles on the Moonwatch, I'll think that will be my next one for weekend carry.
What I would also like, is a classic vintage model, preferrably no date, manual wind, white dial, stainless case. What classic models should I start to look for ... I've seen some gold Seamasters from the 60's and they look great, but they're all gold. Did they make stainless models as well? I'm not sure on price ranges, but from what I've seen, they go from $500 to a $1000 for an automatic gold 60's Seamaster. So perhaps a manual stainless one would more affordable.
Does an "icon" exists from that era, like the Bond watch now and the Moon-watch?
