My guess is that the film makers or Omega (who decides on these things, anyway?) thought a quartz watch would make more sense for our action hero because you can (theoretically) knock it around and it isn't quite as fragile as an automatic, and quartz watches have a rep for being more accurate.
However, cooler heads prevailed and in the second and third Brosnan Bond flicks, 007 uses the automatics.
