I too struggle to capture the texture of the grey dial but by moving my phone around randomly I can usually arrive at an angle that beats most of the reflections on the plexi. Best results seem to be daytime and indoors behind a shaded window, without light coming directly at the watch. Putting photos to one side, what annoys me personally is that in winter months when light is low the dial texture seems increasingly difficult to see with the naked eye, most of the time it just looks dark grey or black whether indoors or out, as has been noted by others. Summer seems to suit it much better !
