In fact a crystal is a mineral with an ordered atomic structure. Saphires and Rubies are aluminium oxides with traces iron, cromium o titanium that give the colour. These stones have have an hexagonal crystaline structure (which is the disposition of the atoms in the material's internal structure).

Saphire crystals for watches are synthetic, so they are build from pure Al2O3 (aluminium oxide) that has no colour.

So we can say CRYSTAL with confidence, we are say nothing wrong. We could say Rubi Crystal or Saphire Crystal or Corundum Crystal or wahtever you want, but I'm sure that when you'll go into a jewellery to by a rubi or a saphire fro your girl or wife you won't say: "Hi, I would like to buy a red corundum or a blue corundum" ;-)
