My SMP (new 10/99) came with
1) Worldwide Service Centres Network
2) Operating Manual (On the inside you realize this is for the Seamaster Professional. It lists the features of this particular model.
3) Operating Manual (On the inside of this manual, which is apparently somewhat generic for Omegas, it tells you how to set the time, date, etc. I assume this is the adjustment you referred to; apparently your jeweler omitted this from your wallet (the papers should come in a very nice leather wallet that matches the Omega Box). Since both manuals have the same title on the outside, it's possible the salesman didn't realize that the two "Operating Manuals" are different and removed one by mistake. I would contact your jeweler; if that fails email Omega at their site and request one.
