Paranoia of unethical middlemen...

Those dealers themselves do not remove the serial numbers.

It is the UNETHICAL AUTHORIZED DEALER that sells the watches to wristwatch.com and watchworld.com that removes the serial numbers. The idea is for the U.A.D. to try to protect themselves from the consequences of violating their Authorized Dealer Agreements with Omega by reselling the watches at near wholesale to these unauthorized dealers.

But it still does not make any sense, as the watches still contain a second copy of the serial number inside the watch on the movement. So I'm not really sure what these people think is really the point of removing the exterior numbers anyway.

So I see nothing other than paranoia and guilty behavior to explain altering the watches like that.
