In my opinion, generally white dials watches looks more to be elegant oriented while the dark dials tend to sport appearance.
Personally for Seamasters I like the black dials more.

On this question, it depends on what you are expecting of your watch, whether you need a pure diver with a laps time bezel (SMP) or rather a sport watch that contains a second time zone (GMT)etc...
Of course there are the SM120 w/o a bezel and the chronograph model that may meet your needs.
BTW for myself I picked the SMP chmtr black dial.

Just my opinion.
