question about over winding

I just got my first OMEGA a titanium SMP chrono!!
It is great!!
But I am just so shocked that the operating instructions are so BASIC!!
Could some one tell me if it is possible to over wind my watch (manual wind).
I know that the auto wind part of the watch stops it from over winding.
And when setting the time do I set the date firs or the time.
I know this is very dumb questions but I am young and in love with my watch!!
