The thing about auctions is that they are a good test of the market - that is, what the market is currently looking for. If two or more people really want a particular watch in order to build or complete their collection, then the price achieved will inevitably be higher and the bidding - at least to begin with - will go fast. And if there are very few people interested in a particular watch - however good its condition - the bidding will be slow and the price low. There is absolutely always a buyer for a rare, excellent condition watch - which is why, I'm sure I don't have to tell you, that if you are collecting you should look for: condition, rarity and provenance (or a link with a famous person).
I'd certainly like to learn more about the Siffert you mention.
